Tuesday tip: Especially when cooking fruits and veggies, you may notice air bubbles appearing in your plastic bag while in the water bath. But don’t fret—these are typically just gases being released from the cells of the veggies (as well as some meats, but much less) as they cook.
You should start worrying if there’s so much air in the bag that it causes your food to float and parts of your food to not be completely submerged; you run the risk of under cooking those parts and may render them unsafe, which would be really sucky!
