I remember when I worked front-of-house at a little restaurant and I loved my Chef’s cooking — his name is Chef Justin Smillie. I begged him to let me cook, and one night he took me up on it and had me bring a 20 pound bag of seaweed on my bicycle to Barbuto’s (Jonathon Waxman’s resto in the West Village) basement to prep for a wedding feast. This was after an entire night of service at our restaurant but I didn’t feel tired at all, it felt like I flew to get there; I was so excited.
It was the first time I ever cooked in a commercial kitchen, I witnessed and learned how to butcher a whole pig. We worked through the crack of dawn. I had a delirious smile on my face and my legs started to wobble. When he sent me home he and his sous chefs were still cranking away at full speed. I opened my apartment door (forgot to lock it), did a faceplant, and then slept for 12 hours.
Chef Smillie gave me a chance to live out my dreams just like you’re doing. I’m ready to work hard and do multiple satisfying faceplants. However, we are going to have to cap the number of parties at 9 (ending at a 500K reach goal) to insure each one is as ballin’ as a big fat Greek wedding. Every backer of a Nomiku will have say in which cities we go to in a survey sent out at the end of the Kickstarter campaign.
