The Romaine represents the bitters and the dressing also incorporates parsley— there’s also a delicious punch of horseradish. Haroset is represented by the walnuts and the honey apples, the honey and lemon get deeply infused into the apple and the low temperature gently sous vides the apple so that a pleasing not raw but not mushy texture is achieved. Egg, traditionally a part of the seder is playfully dressed in crunchy matzo that is evocative of matzo brei! This dish is best served in a chilled bowl.
