We’re artichoke-d up over this recipe. A lot of times, sous vide veggies don’t get enough attention, in lieu of meatier, more protein-y things like meats and eggs.
We threw caution to the wind and sous vided these artichoke puppies up and they came out tender, with a nice bite. Paired it with some citrus mascarpone, and then gave ourselves a pat on the back. A true work of art-ichoke.
