This summery salad is Lebanon’s answer to Italy’s panzanella, using toasted pita in place of country bread. Because the flavors work so well, we’ve incorporated the strictly Italian mozzarella and balsamic vinegar, bringing these two cuisines together. A quick sous vide cook takes the place of a long marinade, drawing juice from the tomatoes and peppers while softening the flavor of the scallions and garlic.
