Cemitas are a loose alliance of Mexican sandwiches featuring various meat/salsa/cheese combinations. The primary factor that unites them is the soft roll (typically with sesame seeds) that carries their various fillings. Oh, and deliciousness. Here sous vide cooking allows us to fill our buns (heh) with meltingly tender pork rib and a simple but layered salsa verde. Cheese and avocado round out the party, because delicious loves company.
