Here’s a special Thirsty Thursday from our friend Steve Rodia at Fork & Stave! Instead of using sous vide to make an infused alcohol, he uses it to make a sous vide shrub!
According to Steve, shrubs–acidulated beverages, similar to a drinking vinegar–were popular during the colonial era in America as they didn’t require refrigeration and helped to keep fruit from spoiling.
