It’s easy to forget about mushrooms when it comes to sous vide cooking, but in our minds this is a grave oversight. Not only does the delicate flavor and texture of mushrooms make them extremely well suited to a sous vide approach, you can get excellent results in practically no time.
Just 10 minutes is all it takes to make incredibly flavorful, juicy shrooms. We opted to amp up the natural umami richness of wild mushrooms like lobster and porcini with soy and oyster sauce, then counterbalance it the brightness of ginger and mirin.
While the particular mushrooms we used were delicious, any mix you like will work great, just aim to combine different flavors and textures for the most fun(gi) eating experience.
